A New Chapter for Store Development

 

Dear T&T Family,

 

As we continue to grow rapidly across Canada and the U.S., how we design, build, and rollout our stores is more critical than ever. T&T has been one of the fastest growing food retailers in Canada and we are continuously investing capital into new cities. That’s why I’m excited to share the creation of a brand-new department: Store Development.


At the helm of Store Development is Kevin Suen, someone many of you know well. Kevin has been with T&T for over 30 years, growing with the company from the very beginning. His deep knowledge of our stores and its operation make him the perfect person to lead this new chapter.


“I’m honored to take on this opportunity and grateful for the trust and support I’ve received. With my experience in store operations, I hope to bring our teams closer together to open and operate stores more efficiently. I look forward to learning from Tony, Paul, and Crystal’s teams, and working alongside them to reach new milestones together,” said Kevin.


Store Development will bring together everything related to how a T&T store comes to life—from site selection to opening day and beyond. Under this new department, we’ve brought together three key areas:


  • Engineering and Design, which will continue to be led by Tony Low, our Senior Director.

  • Construction, led by Paul Lam, who will be rejoining T&T as Director of Construction and has spent many years with T&T in various engineering roles. Paul has a very good idea of how to turn a T&T from a drawing to a destination.

  • Property, led by Crystal Zhang. We’ve now moved this function from Finance to Store Development so that all areas, including commercial rental units management, is fully aligned under one vision.

This growth is especially meaningful given the macroeconomic environment. While many retailers are downsizing, T&T is scaling up — and that brings a wealth of opportunities, especially for our T&T family. We need talent to grow our team in both stores and support centres. You can see it with leaders like Kevin stepping into a completely different role and expanding his experience to help shape our future. There are more opportunities now than ever, so I encourage you to keep your eyes out for opportunities and raise your hand if something interests you.  T&T jobs are posted on our website, store notice boards, and our WeChat account.

A model of professionalism and dedication in the Cashier Department

The Cashier Department is key to our daily operations, and Supervisor Sunny stands out with her professionalism and outstanding performance. Her dedication makes her truly deserving of this recognition.


Sunny approaches her work with focus and attentiveness, managing peak hours and unexpected situations with calm composure while consistently delivering an excellent customer experience. Highly skilled at the register, she also demonstrates strong responsibility and professionalism, making her a trusted and respected member of the team.


Cashier work demands quick thinking and clear communication. Sunny readily shares her experience and patiently supports her colleagues, helping to create a smoother, more efficient workflow. She understands the true value of teamwork, stepping up when needed and offering support at the right time, greatly enhancing team spirit and morale.



Sunny's unwavering honesty and integrity are especially commendable. She strictly adheres to each detail in the SOP when it comes to handling money and verifying transactions. Her professionalism and sincerity have not only earned the trust of customers, but also set a strong example for her colleagues. Sunny's performance fully embodies the professionalism and core values of the Cashier Department, making her an indispensable member of the team.



Real-time temperature control keeps dough fermentation on track

The bakery's proofing chamber suddenly broke down causing the dough to ferment ahead of schedule, creating what is essentially a Head Chef's worst nightmare. Overproofed dough means having to scrap the entire batch, empty shelves, and a big hit to sales. After several sudden failures, losses totaled nearly $7,000. Watching it all unfold, Assistant Department Head Keven wondered to himself how we could fix this for good.


Known for his keen eye and skilled hands, Keven proposed a clever solution: installing a temperature alarm. This small gadget is affordable, simple to use, and easy to install. With the full support of the Store Manager and team members, this "temperature guardian" was quickly put to work.


It provides round-the-clock protection, instantly alerting the Head Chef if the proofing chamber’s temperature goes off, allowing immediate action to save the dough. Thanks to this little helper, the bakery has successfully rescued multiple batches of dough just in time, preventing losses and proving that "small ideas lead to big impacts".

Losing big for petty gains

Asset Protection Dept.


A case of employee fraud was recently uncovered by the Asset Protection Department. An employee at a certain store's Seafood Department abused their position and hid an entire salmon fillet beneath fish bones, changed the packaging, and then labeled it with a lower-priced tag meant for fish bones. This employee then reserved the item and attempted to purchase it at a discounted price after work.


The company has a zero-tolerance policy toward any breach of integrity. In many similar cases, employees were terminated over as little as $10 to $20, or even just a few dollars. Beyond dismissal, such actions can lead to a criminal record, affecting career prospects, immigration, citizenship applications, personal development, and family life. A small mistake can change your entire future. This is truly a case of losing far more than any minor gain. 


We would like to take this opportunity to remind everyone that integrity and honesty are the core corporate values here at T&T. Each employee must abide by the Employee Shopping Policy and exercise self-discipline. At the same time, we encourage employees to report any unusual or improper behaviour to the Asset Protection Department or management so that we can all do our part to maintain a fair, just, and honest work environment.
